Ingredients:
1 lb. Spaghetti (cooked)
1 cup Provolone Cheese (Small Dice)
2 cups of Mozzarella (Shredded)
1cup Pecorino Cheese (Ground)
4 Whole Eggs
1 qt. Marinara
1 cup Seasoned Breadcrumbs
1 cup White Onion (Small Dice)
1 lb. Ground Beef
¼ cup Olive Oil
Instructions:
1. In a sauté pan heat the oil, add the ground beef and sauté until beef has browned and the onions are translucent.
2. Remove from the heat and drain the oil from the beef, set aside and allow to cool.
3. Cook the pasta until al dente and cool.
4. In a bowl, add the spaghetti, provolone, mozzarella, pecorino, eggs, marinara, breadcrumbs, and the beef mixture.
5. Mix until all the ingredients are fully incorporated.
6. Spray a muffin tray with non-stick spray or coat with butter.
7. Form a ball with the spaghetti mixture and place into the muffin tray.
8. Place the tray into the oven at 350⁰ for about 30 minutes or until the muffins have browned on top. Remove from the oven and cool.
9. Garnish the muffins with a little sprinkle of pecorino cheese and chopped parsley.
